Nutty Vegan Fudge Recipe

I’ve been craving something a little indulgent, especially working at home when my penchant for sugary snacks comes out full swing. There is nothing quite like an afternoon treat to rouse and inspire me when completing deadlines.

This delicious homemade fudge is so quick to make and has the added bonus of not being too unhealthy either, perfect for satiating my sweet tooth.

To make you will need;
170g Almond Butter
30g Peanut Butter
80ml Maple Syrup
2 Tablespoons Desiccated Coconut (plus extra for the topping)
2 Tablespoons Nuts (chopped – I used a mix of pistachios and walnuts, but you can use any you find lurking in your cupboards)
1 Teaspoon Vanilla Extract

Put all the ingredients in the food processor and blend until the mixture forms a ball.

Line a tray with clingfilm and scoop the mixture into the tray, pressing down to make the surface even. Then pop into the fridge – I kept mine in there for around 3-4 hours.

Place the fudge on a plate and sprinkle the extra desiccated coconut on top, pressing down lightly to make sure it sticks. Then it’s ready to be cut into squares.

These can also be frozen, so you don’t have to eat them all at once!
