I’m a little obsessed with how good these tasted. They did not last long in my household! The recipe was quite fiddly for my standards. I made sure to get proper vegan block butter, not the spreadable stuff I’m used to. I also chilled the dough twice, a technique I’ve never used before but worked really well.

Baking does not come naturally to me, as I’m not exactly a patient person! So I’m really pleased with how they came out, they were definitely worth the wait as they were the most delicious, soft cookies I’ve ever made.

My husband has already made a request for me to make these again, though next time I might add some dark chocolate or something similar for a little extra texture and taste.
